1.50 oz Tanqueray 10 Gin
0.75 oz White Pepper Honey*
0.50 oz Grapefruit Juice
0.25 oz Lemon Juice
3 Dashes Bittered Sling Grapefruit and Hops Bitters

Combine all in a shaker tin and strain into a collins glass. Top with approximately 3.00 oz of dry Irish Cider, and add Ice. Garnish with a grapefruit wedge.
*White Pepper Honey Recipe – yield 800mL syrup
500g Honey
500g Boiling Water
Mix until combined, refrigerate up to 7 days.
